You give up selectable text and precise vector lines. Do this on a copy. For hiding a particular sentence, Redact is the better tool because it only flattens the pages you mark.

Questions

Is flatten the same as compress?

Both redraw pages. Flatten aims at a clearer picture. Compress lets you choose a smaller file.

Are form fields still editable?

No. The flattened file is a picture of the pages.
